SIGNATURE SPIRITS

The Olde Pink House is delighted to offer a wide range of spirits, including a number of unique offerings that are custom-blended specifically for our guests to enjoy. Each of our signature offerings has been selected with the idea that our guests would sip them neat. However, these exceptional spirits are also sure to elevate any cocktail. That’s why we have created a selection of curated cocktails to highlight these very special ingredients.

 
 

Papa’s Pilar Dark Rum

Known for its proprietary solera blending process, Papa’s Pilar Dark Rum spends time in bourbon barrels, port wine casks and Spanish Oloroso sherry casks before resting in one of these specific barrels for an extended period of time. This process creates a blend of flavors that are exclusive to each barrel, resulting in a very well-rounded rum that’s ideal for sipping neat. We highlight Papa’s Pilar Dark Rum in our Planters Punch Cocktail, along with Papa’s Blonde Rum.  

 

Woodford Reserve Bourbon

All of our signature spirits are expertly crafted, but our bourbon is the most customized to our specific tastes. We travel to Louisville and sit with Chris Morris, master distiller at Woodford Reserve, to create what we believe is a bourbon you will not forget. First, we taste three barrels that have yet to be proofed. Those three barrels are then blended into three batches and proofed to 125 or below. We then taste those three batches and make our selections. Smooth enough for a novice and complex enough for a connoisseur, notes of citrus, caramel and vanilla always come through. We feature this signature spirit in our Woodford Mule cocktail, along with our housemade ginger ale.

 

Casa Herradura Double BARREL Reposado Tequila

Nothing best represents what tequila is all about than the aroma of baked agave that’s released when you open a bottle of our double barrel reposado tequila. Our tequila spends 11 months in a neutral-charred American white oak barrel and then an additional 30 days in a new charred barrel. Each step adds to the complex flavors: the neutral barrel lends oak, clove and vanilla notes, while the new barrel offers citrus, honey and floral notes. Master distiller Teresa Lara Lopez proudly continues the same process in Jalisco, Mexico that founder Felix Lopez did back in 1870. We present our tequila in our Jalapeño Margarita, which includes our housemade smoky jalapeño simple syrup.

 

atomica Raspberry Vodka

There is no one more suited to craft the vodka for our refreshing Pink Lady cocktail than Atomica’s Smith Mathews, a lowcountry native known for creating some of the most flavorful and authentic libations in the south. All things raspberry come through on the nose and make Atomica’s vodka a perfect complement to our fresh-squeezed lemonade. Fruity, refreshing and perfectly suited to cool you off in this South Georgia heat, our Pink Lady cocktail is just as famous as our signature Crispy Scored Flounder entrée.   

 

Highclere Castle Gin

Best known as the iconic site of Downton Abbey, Highclere Castle has also been the home of wild juniper since the ancient Roman days. In addition to the lavender, orange peel and lime on the property, estate-grown oats are also introduced to give the gin a unique creaminess, making it perfect for the classic gin and tonic. To make our Proper Cocktail, we infuse that gin with our custom blend of hibiscus tea created by Wayne Ashford of the Ashford Tea Company here in Savannah. Hibiscus, rose hips and cornflower petals make this herbal tea slightly tart, flavorful and aromatic, rounding out the flavor profile of this popular cocktail.

 

Sonoma-Cutrer Chardonnay, Les Pierres Vineyard

Our select barrels of chardonnay come from the acclaimed Les Pierres Vineyard, which is located at the southern end of the Sonoma coast appellation. Our relationship with this iconic vineyard allows us the opportunity to meet with wine director Mick Schroeder and chardonnay wine maker Cara Morrison to select barrels from not only a specific vineyard, but all the way down to the block and row of the actual fruit that goes into our chardonnay. You will enjoy plenty of barrel spices as well as hints of lime and melon in every bottle.
